
Round out a flavorful meal of home-cooked comfort foods with a side of seasoned mashed potatoes.
5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup chopped fresh chives
Salt and pepper, to taste
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
- Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
- Serve hot.
